Chicken Burgers with Fried Chili and Onion
The appetizer is quick and easy to prepare. Char the chilies over a low gas flame for 6 minutes, turning frequently. Place in a bowl, cover with a lid or plastic wrap. Let stand for 20 minutes, then wipe with paper towels and remove the skin, stem, and seeds. Cut the chilies into strips and place in a bowl. Heat 2 teaspoons of oil in a large skillet over medium heat. Add the onion, season with salt and pepper. Cook until the onion is soft and translucent, about 10 minutes. Add the onion to the bowl with the chilies and mix. Shape the ground chicken into 4 patties 10 cm in diameter, season with salt and pepper. Heat a large shallow skillet over medium heat. Add 2 teaspoons of oil. Fry the patties for 2 minutes. Place cheese on top and fry for about 4 minutes more. Meanwhile, preheat the oven. Brush the buns with oil and place on a baking sheet, greased side up. Toast lightly, place the patties and chili-onion mixture on the buns. Top with the remaining bun halves and serve. Serve with greens and sauce.
