Lenten cupcakes

The baked goods are simple and quick to make. Our family doesn’t observe Lent (not out of principle—it just somehow worked out that we don’t fast). Still, one day I quite accidentally came across a recipe for Lenten muffins somewhere, tried making them, and I wasn’t wrong. The Lenten muffins turned out amazing; in my opinion they’re even tastier and more original than regular ones. Here’s the recipe. You can serve them with tea or coffee.

The recipe won’t take much time. The cupcakes turn out very tender, so make sure you cool them completely, and before removing them from stiff muffin cups it’s best to run a knife blade around the edge between the cupcake and the tin. Instead of chocolate chips you can use chopped chocolate, chocolate shavings, or chopped nuts. They can be served with tea or coffee.

Cottage cheese cupcakes in an air fryer

Bright golden cottage cheese cupcakes vanish from the plate in an instant! That’s why it makes sense to mix dough for a double batch right away and bake enough for everyone so there are seconds for all. If you like, you can hollow out the centers and fill them with jam or boiled condensed milk. Serve warm or chilled. Perfect with tea.

Cupcakes in an Air Fryer

A very simple recipe and one of the most successful mini cupcake recipes. Today we’ll make them in an air fryer, but you can of course bake them in the oven as well. Check the cupcakes for doneness with a toothpick—it should come out dry. You can swap the chocolate for berries or any dried fruit if you like, for a new and interesting flavor every time. You can drizzle the finished cupcakes with glaze or cover them with frosting, but they usually don’t make it that far—they vanish in an instant! Be sure to try them. Serve warm or chilled. Perfect with tea.

Coconut muffins differ from wheat-flour baking: they have a softer, more crumbly texture. Maple syrup can be replaced with date and apple syrup. Before baking, you can sprinkle the muffins with white coconut flakes for a nice contrast. They keep best in a bag in the refrigerator. Serve cooled or slightly warm.

Muffins with psyllium

The baked goods are simple and quick to make. I suggest making gluten-free muffins with psyllium husk, almond flour, and corn polenta. Every ingredient in the recipe is there for a reason. Polenta gives the bake an interesting texture. Psyllium replaces gluten and helps the batter rise. Almond flour adds volume and aroma to the bake. Fruit purée gives the muffins pleasant moisture and flavor. Give it a try—you will succeed. Serve cooled or slightly warm.

Cottage cheese cake with blueberries
60 min4 serv.

Cottage cheese cake with blueberries

Baked goods are simple and quick to make. A cottage cheese loaf cake with blueberries is one of many delicious cottage cheese cakes. In general, I like cottage cheese baking much more than flour-based baking—cottage cheese cakes turn out softer and moister, with a nicer, less dry texture. Berries and other ingredients are there to give a specific flavor. So with this recipe you can make a cottage cheese loaf cake with blueberries, or with some other berry—it will be just as good, or maybe even better. Cottage cheese loaf cake with blueberries recipe: 1. Beat the sugar with the butter thoroughly for about 5–8 minutes. 2. Add the cottage cheese (rubbed through a sieve beforehand) and mix until smooth. 3. Grate the zest of half a lime on the finest grater. 4. Add the zest of half a lime and vanilla essence to the cottage cheese mixture. Squeeze in the juice of half a lime as well. Mix. 5. Add the eggs to the mixture one at a time. 6. Add half of the flour (I used half almond flour and half wheat flour). 7. Mix vigorously. 8. Now add the other half of the flour and the baking powder. 9. Mix everything until smooth. 10. Dust the loaf pan with flour and grease it with butter. 11. Spoon the batter into the pan along with the washed berries. 12. You can sprinkle brown sugar on top of the cake for a nice brown color. Bake in an oven preheated to 170 degrees for just under an hour. 13. Done! Slice and serve. You can serve it with tea or coffee.
