
Flourless oat muffins in the microwave
Description
Delicious baked goods for the whole family. Simple, tasty, and quick to make! The cupcakes bake through very well and have a light, airy porous texture. If you like, you can add nuts, raisins, dried fruit, or coconut flakes to the batter. If you have a sweet tooth, you can increase the sugar or any other sweetener a little. I baked mine in mugs, but you can use muffin tins too. The baking is ready. Serve at the table.

Prepare all ingredients according to the list. Ryazhenka can be replaced with kefir, sour cream that is not too thick, or plain yogurt. Use quick-cooking rolled oats.

Grind the oat flakes in a blender or with a coffee grinder.

Add ryazhenka, sugar, cocoa, egg, cinnamon, and baking powder to the crushed flakes.

Mix until smooth.

As molds for the cupcakes I used mugs. Grease the bottom and sides with vegetable oil. Spoon the batter into the mugs and microwave uncovered. Bake at 600 W for about 4 minutes, at 700 W for about three.

I recommend opening and checking after 2 minutes. Then add time in 30-second increments until fully cooked. I check doneness (as usual) with a wooden skewer.

Remove the finished cupcakes by carefully turning the mug over and, if you like, decorate to taste.
