
Millet Muffins

Homemade pastries for tea. I'll tell you more below. Can be served with tea or coffee.

Prepare all the ingredients. Rinse the millet several times in advance and soak it in water overnight.

Then rinse the millet once more and drain it in a sieve. Let the excess liquid drain off.

Transfer to a deep bowl, pour in 1/4 cup of water, and blend until smooth.

Peel the banana, slice into rounds, and add to a bowl.

Pour in the olive oil. Blend again with a blender.

Then add sugar, baking powder, lemon zest, ground cinnamon, nutmeg, and a pinch of sea salt.

Pour in the apple cider vinegar and whisk again.

At the end, add the dried cherries. Stir until they are evenly distributed.

Divide the batter among cupcake molds. Bake in an oven preheated to 180°C for 35–40 minutes. Test for doneness with a skewer or toothpick.

Cool the finished cupcakes on a wire rack.
