Baked goods are simple and quick to make. A cottage cheese loaf cake with blueberries is one of many delicious cottage cheese cakes. In general, I like cottage cheese baking much more than flour-based baking—cottage cheese cakes turn out softer and moister, with a nicer, less dry texture. Berries and other ingredients are there to give a specific flavor. So with this recipe you can make a cottage cheese loaf cake with blueberries, or with some other berry—it will be just as good, or maybe even better. Cottage cheese loaf cake with blueberries recipe: 1. Beat the sugar with the butter thoroughly for about 5–8 minutes. 2. Add the cottage cheese (rubbed through a sieve beforehand) and mix until smooth. 3. Grate the zest of half a lime on the finest grater. 4. Add the zest of half a lime and vanilla essence to the cottage cheese mixture. Squeeze in the juice of half a lime as well. Mix. 5. Add the eggs to the mixture one at a time. 6. Add half of the flour (I used half almond flour and half wheat flour). 7. Mix vigorously. 8. Now add the other half of the flour and the baking powder. 9. Mix everything until smooth. 10. Dust the loaf pan with flour and grease it with butter. 11. Spoon the batter into the pan along with the washed berries. 12. You can sprinkle brown sugar on top of the cake for a nice brown color. Bake in an oven preheated to 170 degrees for just under an hour. 13. Done! Slice and serve. You can serve it with tea or coffee.
