Minestrone Soup with Kale and White Beans
This recipe won't take much time. Heat oil in a large pot over medium heat. Add onion and garlic, season with salt and pepper. Cook, stirring, until the onion begins to soften, 5 to 6 minutes. Add tomato paste and cook, stirring, for about 30 seconds. Add cabbage, thyme, and red pepper flakes. Cook, stirring, for 2 to 4 minutes. Transfer 1/4 of the beans to a bowl and mash them with a spoon. Add the beans to the pot along with the tomatoes and 4 cups of water. Bring to a boil, reduce heat, cover, and simmer until the cabbage is tender, 10 to 15 minutes. Season with salt and pepper. Serve with grated Parmesan cheese, if desired. Ladle into bowls and serve.
