
Traditional minestrone
Description
Minestrone is a traditional Italian soup. It is a soup made from a mixture of vegetables, very easy to make, but preparing all the vegetables takes a lot of time. Ladle into bowls and serve.

Soak white beans overnight, one day in advance. Clean the peas. Chop tomatoes and fresh onion.

Cut the green beans into pieces.

Cut the zucchini, carrots, turnip, and potatoes into small pieces.

Cut the asparagus and boil it briefly in salted water.

Boil white beans in salted water, but do not overcook them. Drain.

Heat olive oil in a large pot, add onion, salt, and pepper, and sauté for about a minute. Add turnip, carrots, and potatoes. Mix well. Add zucchini, beans, green beans, and asparagus. Mix well and sauté for 5 minutes, stirring occasionally. This preliminary cooking of vegetables in oil is important for giving minestrone its rich flavor.

Add 2 liters of water and chicken cubes. Bring to a boil, then reduce the heat and continue cooking until all the vegetables are well cooked.
