
Minestrone with beans

Hearty and aromatic soup. Minestrone in Italian families is quite common and everyday dish, and it is made from seasonal vegetables available on the market at that time, so this soup doesn't have a specific set recipe. So, pour 1.5 liters of water into a pot and place it over heat. When the liquid comes to a boil, add the broth cubes to the pot and stir until they are completely dissolved.

Now quickly peel and chop the vegetables. Cut the potatoes and carrots into small cubes, finely chop the onion, drain the water from the beans and rinse them.

We cut the young zucchini into cubes as well, and finely chop the celery.

Chop the fresh herbs, cut the tomatoes into small pieces, and peel the garlic.

We leave half of the beans whole and mash the other half using a special tool or a blender.

When the cubes dissolve in water, add the potatoes, zucchini, carrots, onion, celery, beans, and garlic to the pot. Let the soup simmer for 40–50 minutes. Ten minutes before it's done, season with salt and pepper, add the tomato and chopped herbs. When the soup is ready, pour in 2 tablespoons of olive oil, stir, and serve.
