Description

The soup is simple and quick to prepare. This excellent Italian vegetable soup, minestrone, will be a wonderful addition to your table. There is no classic recipe for minestrone—depending on the season, various vegetables can be used. It might include fennel, zucchini, pumpkin, beans, and so on. Use whatever vegetables you can find at the market. However, any minestrone should always be served with pesto sauce, which you can either make yourself or buy at the supermarket.

    1. Place the meat in a large pot and add water. Cook to make broth until the meat is done. Then add coarsely chopped vegetables to the pot: leek, 2 carrots, 2 celery stalks, 1 onion, and thyme. Season the broth with salt and pepper to taste.

    2. Remove the film that has formed from the broth and continue cooking for another 20 minutes.

    3. Strain the broth from the meat and vegetables.

    4. At the next stage of preparation, you will need onion, celery, carrots, and garlic. Dice them into medium cubes and place in a pot with the broth to cook for 10–15 minutes.

    5. Season the broth with balsamic vinegar, tomato paste, and thyme; add the tomatoes in their own juice. Bring to a boil, then add the spaghetti and cook for 5 minutes.

    6. At the end of cooking, add the shredded cabbage, bring the soup to a boil, and serve.
