A hearty first course. Minestrone is the most popular soup originating from Italy. It is so closely associated with soups that beyond the country's borders, when people say "Italian soup," they undoubtedly mean minestrone. Its base consists of broth, vegetables, and legumes. Italians prepare it using seasonal ingredients, but it's also acceptable to use frozen or canned ones. I highly recommend you try making this light, delicious, vibrant, and appetizing soup. Ladle into bowls and serve.

    Finely chop the garlic. Remove the seeds from the chili pepper, and dice the zucchini, broccoli, potatoes, onion, carrots, and leek into small cubes.

    Break the broccoli into florets.

    Over medium heat, sauté garlic, chili, onion, potato, leek, and carrot in olive oil. Add balsamic vinegar.

    Add the vegetable broth, season the soup with salt and pepper to taste. Then add the zucchini and broccoli, and cook the soup over medium heat for 7–10 minutes.

    Meanwhile, dice the tomatoes and chop the green onions. Cut the corn lengthwise into several pieces.

    Add the tomato, corn, beans, and green onion to the pot. Boil the soup over medium heat for an additional 5–7 minutes.
