
Vegetable soup
Description
The recipe won't take much time. You don't need to be in Italy to enjoy this delicious soup. With my recipe, you can easily prepare it at home. This soup resembles a vegetable stew; by the way, sliced mushrooms would be a nice addition here, though optional. Serve with fresh herbs and sour cream.

Add olive oil to a saucepan and place over medium heat. Add the chopped onion and minced garlic, and cook until softened.

In a saucepan, combine chopped tomatoes with tomato juice, broth, minced spinach, chopped zucchini, grated carrots, chopped celery, beans, seasoning, salt, and pepper. Bring to a boil, then reduce heat to low, cover with a lid. Simmer the soup for about 45 minutes.

Add the pasta to the boiling soup and cook over medium heat until the pasta is done.
