
Vegan minestrone
Description
Hearty and aromatic soup. This soup is made on vegetable broth with green vegetables, resulting in a light yet filling dish. Minestrone has no strict recipe—feel free to use whatever you have on hand: zucchini, tomatoes, broccoli, spinach, and other plant-based ingredients. Adjust the consistency to your taste; the soup can be made either very thick or more liquid.

Prepare all the ingredients.

Dice the carrots, celery, and onion. Sauté them in a pot with 2 tablespoons of butter.

Add the sliced potatoes, zucchini, green beans, and peas.

Fry for another couple of minutes, then pour in the broth and cook the soup for 10 minutes. Season with salt to taste.

Add the pasta and cook for another 10 minutes until done. Serve minestrone with basil leaves.
