
Vegetable minestrone

This Italian soup varies in ingredients depending on the season, because Italians make it in the following way: they simply go to the market and buy all the fresh seasonal vegetables available. Therefore, the essence of this minestrone recipe is to include as many different vegetables as possible, which is why the ingredient list is quite extensive. First, wash, peel, and chop all the vegetables. Cut the zucchini and carrots into small cubes, and the celery into slices.

Now pour vegetable oil into the pot, heat it, and melt a piece of butter in it. If you're preparing a vegetarian version, simply replace the butter with 2 tablespoons of vegetable oil.

Place the chopped onion and carrot into a saucepan and sauté them until soft, about 4 minutes.

Then add leek, zucchini, and celery to the pot, mix everything and simmer for another 4-5 minutes.

Pour in 100 ml of wine and continue simmering for 4-5 minutes. While the vegetables are cooking, cut the potatoes into cubes and boil them separately until partially cooked (about 5 minutes).

Next, add the potatoes and pour in a liter of hot vegetable broth (you can use the water in which the potatoes were boiled).

Drain the beans in a colander and add them to the soup in the same way, then salt and pepper the soup.

When the vegetables have boiled for about 10-15 minutes, you can add the pasta to the pot and continue cooking the soup until the pasta is almost fully cooked (it should still be al dente).
