
Minestrone in a multicooker

I think many of you are familiar with the situation when, in summer during the vegetable season, so many vegetables accumulate at home that you no longer know what else to cook from this abundance. But now I know the solution to this problem and I suggest you a simple recipe for minestrone soup in a multicooker, for which we'll need as many different vegetables as possible. This is exactly what makes this Italian soup unique—it turns out very thick and rich thanks to the large number of ingredients. And since we'll be cooking it in a multicooker, our task is minimized: we just chop the vegetables and put them into the pot, and then we can go about our business while the appliance does the work for us—convenient, isn't it? So, let's begin. First, we peel the onion, but instead of chopping it, we simply make a cross-shaped cut on it, going down to about half of the onion bulb. Place the onion in the multicooker bowl.

Peel the turnip and cut it into strips.

Cut the carrot into quarters.

Cut the celery into several large pieces (it is needed for flavor).

Cut the potatoes into cubes.

We do the same with the young zucchini.

We thoroughly wash the mushrooms and slice them.

Shred the cabbage.

Now simply place all the chopped vegetables into the multicooker bowl, and put the meat on top as a whole piece. When the soup is ready, just remove the beef, divide it into portion-sized pieces, and return it to the soup.

Return the bowl back to the multicooker and pour water into it up to the very last mark on the bowl.

Turn on the "Soup" mode for an hour and in the meantime, you can watch your favorite TV series.

When the cooking cycle is complete, we open the multicooker, season the soup with salt and pepper, and add chopped herbs. Cook the minestrone for another 5 minutes using the "Steam cooking" setting. Serve the ready soup in bowls and bring to the table.
