
Winter chicken soup
Description
Hearty and aromatic soup. This hearty, spicy chicken soup belongs to Anglo-Indian cuisine and has a history spanning several centuries. It was created by Indian cooks to satisfy the tastes of English colonists. Serve this soup in bowls and enjoy.

Peel, rinse, and dice all the vegetables and apples into small cubes. In a saucepan, heat a mixture of butter and olive oil over medium heat. Add onion, celery, and carrots. Simmer the vegetables together until they begin to soften.

Add the bay leaf, ground curry spice, and mix everything well.

Place the chicken meat on top of the vegetables.

Pour in water and broth, add salt, bring to a boil. Cover with a lid, reduce the heat, and simmer the soup for 20 minutes.

Place the cooked chicken meat on a cutting board and let it cool.

Add rice and sliced apples to the soup, bring to a boil. Then reduce the heat and continue cooking the soup over low heat, covered, until the rice is done.
