
Winter Vegetable Soup

1. Pour chicken broth into a medium saucepan. Add barley porridge and cook over low heat. Stir occasionally.

2. Cut the carrots, leek, parsnip, and celery into small cubes.

3. Pour the wine into another large saucepan and add the leek. Bring to a boil and simmer over low heat for 5 minutes, covered. Stir a couple of times to prevent the leek from sticking to the bottom of the pan. Add the remaining vegetables to the saucepan. Simmer for another 5 minutes, stirring occasionally.

4. Pour the broth from the medium-sized pot into the large pot with the vegetables. Add tomato paste and bay leaf. Bring to a boil and simmer over low heat for 25 minutes, stirring occasionally.

5. Before serving, prepare the toasts, season the soup with black pepper and parsley. Serve the soup with toasts.
