
Green salad with capers

A simple dish to prepare. If, like me, you enjoy light dinners, then a green salad with capers is an alternative idea for your light evening meal. It takes literally 5-10 minutes of your free time, which is important—after all, who wants to spend an hour at the stove in the evening after work? Of course, you can't satisfy a hungry man with such a salad, but if that hungry man has a hearty breakfast and an equally substantial lunch, then this salad is quite sufficient for dinner. Although, I think, in terms of flavor, a green salad with capers would make a great side dish to a fish dish. Peel the zucchini, slice it thinly, and cut each slice into 4 pieces.

Place the zucchini slices in a preheated pan with a small amount of oil, and fry over medium heat for 4-5 minutes until the zucchini becomes tender.

Thinly slice the leek into rings, place it in a salad bowl.

Add the thinly sliced celery stalks to the same pan.

Wash the arugula and add it to the salad without chopping.

When the zucchini have cooled slightly (at least to room temperature), add them to the salad bowl.

Finally, add the capers together with a small amount of brine. Mix the salad; no additional dressing is needed—just the brine and olive oil from the zucchini is sufficient.
