Description

The recipe won't take much time. As far as I know, there are many different ways to prepare green gazpacho, and many of them involve heat treatment of certain ingredients. However, in this green gazpacho recipe, there is no heat treatment at all—everything is consumed raw, making the dish suitable for a raw food diet. Although some raw foodists avoid olive oil, you can easily leave it out if desired. Green gazpacho is not only healthy but also delicious, so I recommend it not only to raw food enthusiasts but to everyone else as well. It's especially beneficial for diabetics, since avocados and the other ingredients used in this soup are recommended in diabetic diets. I won't even wish you luck in preparing it, since it's quite simple :) Instead, I'll wish you enjoyment—your soup is ready to serve.

    The ingredients, as you've probably already noticed, are all green :)

    All ingredients need to be chopped randomly. We'll blend everything into a smooth puree later anyway, so you don't need to worry about precise cutting. Just don't add the lime whole—grate a bit of its zest and squeeze some juice from it.

    Add all the ingredients to the blender or food processor bowl, along with the lime zest and juice.

    Blend until smooth. Season with salt and pepper.

    Don't try to achieve a perfectly thick consistency. The main thing is to ensure there are no rather large pieces of vegetables. If desired, you can later make the soup perfectly smooth by straining it through a sieve.

    Transfer the resulting mixture from the blender bowl into a soup container. I'm quite satisfied with a slightly thick consistency of gazpacho, so I didn't strain it through a sieve, but if you prefer a perfectly smooth and not too thick texture—strain it through a sieve.

    Well, the raw food gazpacho is ready - you can pour it into bowls and serve.

    When serving, you can garnish with small cubes of fresh avocado, cucumber, or onion.
