1. Thoroughly rinse the green onions and the rest of the herbs under running water, dry with a paper towel, and finely chop.

2. Wash the potatoes, peel them, and cut into small pieces, as you usually would for soup.

3. Rinse the rice well under running water several times to remove all the dust.

4. Take a deep pot, pour water into it and place over medium heat. Add potatoes, rice, and herbs with green onions to the pot. Cook, stirring, and add salt.

5. Pour a little vegetable oil into a frying pan and add the washed and chopped sorrel. Fry, stirring, for about 4-5 minutes over medium heat.

6. Carefully add the fried sorrel from the pan to the soup, continue cooking over medium heat, stirring.

7. Beat the eggs well with a whisk in a separate bowl, but don't overdo it—they shouldn't turn white. Gently add the flour and whisk everything together briefly.

8. Add the beaten eggs to the soup and mix everything once again. Cook for another 7-10 minutes, then turn off the heat. Pour the soup into bowls and add a spoonful of sour cream. Meatless green borscht is ready.
