
Green cabbage soup for winter
Description
The soup is simple and quick to prepare. This recipe is about it. Ladle into bowls and serve.

1. Rinse the onion, peel it, and chop into small pieces or half-rings (whichever you prefer).

2. Wash the carrots as well, peel and grate on a coarse grater. Or you can cut them into thin strips.

2. Remove a couple of outer leaves from the cabbage, we won't need them. Shred the rest of the head into thin strips. Add the cabbage to a pot of water and place over medium heat to cook.

3. Wash the pepper, remove the stem and seeds, and cut into small cubes.

4. Wash the tomato thoroughly and cut it into cubes of any size (as you prefer). You can also peel the tomatoes by pouring boiling water over them.

5. Pour a little vegetable oil into a deep skillet, place over medium heat, and add all the ingredients: carrots, onion, pepper, and tomato. Sauté for 10-15 minutes, stirring constantly.

6. Add everything from the frying pan to the cabbage in the pot, season with salt and pepper. Continue cooking over medium heat, stirring constantly, for another 30 minutes. At the end, add vinegar and mix well.

7. Sterilize the jars in which you plan to store the soup. You can sterilize them simply with boiling water. Pour the prepared soup from the pot into the jars and seal them. Place the jars upside down (on their lids) and wrap them in a warm blanket until they cool down completely. Then store them in the refrigerator. Green borscht is ready for winter storage.
