
Spinach Green Shchi

The recipe won't take much time. Here is a classic recipe for green borscht made from spinach. Actually, you can do without sorrel in this recipe, but for some reason I decided it would taste better with it, so to speak, traditionally. Do try this dish—I highly recommend you give this soup a try, especially in summer when fresh herbs, vegetables, and fruits are in season! Buy three bunches of greens—and let's start cooking. 1. First, cover the meat with water, add spices, and cook the broth, remembering to skim off the foam. Then reduce the heat and add potatoes and cabbage. At the same time, sauté the chopped onion and carrots in a frying pan.

2. Add the sautéed mixture to the broth, and prepare the greens: thoroughly wash the spinach, dill, and sorrel, then finely chop. Add to the soup only when both the potatoes and cabbage have become soft.

3. Now add the spices, bring the soup to a boil, then turn off the heat and let it steep for about half an hour.
