Description

Perfect for lunch. There are many ways to prepare sorrel soup: it's usually made with vegetables and various meat broths, and for heartiness, potatoes or rice are added, along with egg. Serve with fresh herbs and sour cream.

    Take a piece of pork, wash it thoroughly under running water, and place it in a pot. Cook over medium heat. When the water comes to a boil, reduce the heat. Simmer for 30 minutes.

    Chop the vegetables. Peel the potatoes and cut them into cubes. Grate the carrots and chop the onion into cubes. Remove the stems from the sorrel and roughly chop the leaves. Finely chop the herbs.

    Add the potatoes to the boiling broth and cook for about 15 minutes (until done). At the same time, place a frying pan over medium heat and add a piece of butter.

    As soon as the butter melts, add the sorrel and simmer over low heat for 5 minutes, remembering to stir occasionally.

    Fry the onion and carrot in a heated pan with vegetable oil.

    When the potatoes are cooked, add the vegetables and sorrel, salt and spices to taste. Cook for another 5–10 minutes. Let it steep. Serve the soup with a boiled egg, halved, and sour cream.
