
Fish soup with dressing
Description
The soup is simple and quick to prepare. You only need to try this fish-based soup once to understand how it differs from an ordinary fish soup. In fact, in most good kitchens and fine restaurants, both meat and fish soups are prepared this way: first, a broth is made with the appropriate ingredients, then a flavorful sautéed mixture (sofrito) is prepared, and finally, the strained broth is combined with the sautéed mixture. In my opinion, this is the perfect method for making soup, especially fish soup. Here's an easy recipe: ladle into bowls and serve.

Step 1

First of all, we need a cleaned, gutted, and gill-removed pike-perch. If desired, pike-perch can be replaced with another fish—it's not crucial, I just happened to have pike-perch.

We gut the pike-perch and cut out the fillet. Set the fillet aside, and put the rest (head, tail, fins) into a pot, pour in 2.5 liters of water, and place over low heat. Bring to a boil.

Skim the foam off the boiling broth. When no more foam appears, add onion, carrot, bay leaf, cloves, peppercorns, fennel, and dill to the pot. Cover with a lid and simmer over low heat for 2 hours.

While the broth is cooking, prepare the seasoning. Sauté sliced leeks in a small amount of oil until golden.

After a couple of minutes, when the onion becomes translucent, add finely chopped tomatoes or tomato paste to the pan.

Simmer leeks in tomatoes for about 4-5 minutes, then add wine and continue simmering over low heat for another 15 minutes.

After the specified 15 minutes, add to the skillet the fillet of pike-perch, cut into small portion pieces. Add desired spices (salt, pepper, and anything else to taste), bring the sauce to a boil, and cook for another 5 minutes.

Remove all ingredients that were boiled from the fish broth and strain the broth itself. Transfer the contents of the skillet into the strained broth. Place the soup on the stove, bring to a boil, add fresh herbs, season with salt and pepper, then remove from heat.

Let the soup steep for about 10-15 minutes, then ladle it into bowls and serve. :)
