
Salad dressing
Description
This dressing is the very "secret ingredient" that transformed the ordinary tasty Caesar salad into a globally acclaimed culinary masterpiece. The simplicity of Caesar's ingredients—fresh lettuce leaves, crunchy croutons, and fragrant Parmesan—calls for just such a dressing: vibrant, unusual, and, despite similarities in components, nothing like mayonnaise. One of the key, though not the only, differences is Worcestershire sauce—a legend in its own right!—which is essential for preparing Caesar dressing, along with the now almost legendary garlic clove used to rub the inside of the bowl. Finding Worcestershire sauce might be difficult, but that's no reason to deny yourself your favorite dish—in extreme cases, substitute one anchovy and half a teaspoon of sugar. It's certainly not an equal replacement, but even in top restaurants they resort to this, believe me.

Peel the garlic and rub the bowl for the sauce with a clove. Add the mustard to the bowl.

Separate the egg whites from the yolks. Add the yolks to the mustard.

Cut the lemon in half. Squeeze one half into a bowl.

Add a few drops of olive oil and start whisking the sauce.

Add the oil very carefully, first drop by drop, then in a thin stream. Do not stop whisking! :)

Gradually add salt, pepper, Worcestershire sauce, and the juice of the second lemon half. Whisk the sauce until smooth and thick.
