First, prepare the ingredients. Rinse all the necessary ingredients, slice the mushrooms, onion, and choy sum. Peel the ginger and grate it. In a separate bowl, mix together soy sauce, miso paste, and water.

Rub the chicken thoroughly with spices on all sides and sear in a small amount of oil, skin-side down, for 10 minutes. Then add water and simmer the chicken in the skillet until fully cooked.

Boil the eggs hard. Let's prepare the broth. Mix chicken broth with mirin, soy sauce, and minced ginger until smooth.

Pour the remaining chicken fat into a frying pan, sauté the ginger in it, then add the leaves and stems of choi-sum and simmer everything for 1-2 minutes, stirring constantly.

Place the sliced chicken meat, onion, sesame oil, and remaining soy sauce into a deep bowl. Cook the noodles in boiling water, divide them into four portions, and distribute among the bowls. Top with choy sum leaves, sliced eggs, and pour hot broth over everything. Japanese ramen is ready.
