
Japanese potato salad

When I was in Japan, among the local specialty dishes I tried, the one that impressed me the most wasn't some poisonous fish or exotic seafood, but... the most ordinary Japanese potato salad. I never would have believed that Japanese people eat this—but yes, they really do! Moreover, potato salad is almost always included in bento boxes. All the ingredients of this salad are perfectly familiar to us, but I'm certain none of you have ever tried combining them into a salad quite like this. I wouldn't say Japanese potato salad is divinely delicious, but just for the sake of interest and variety, it's definitely worth a try.

Potatoes need to be peeled and boiled until cooked.

Mash the cooked potatoes into almost a puree, but small lumps are acceptable here, so there's no need to achieve a perfectly smooth consistency.

Slice the cucumber thinly.

We also slice the carrots thinly and blanch them in boiling water for 2-3 minutes, until they soften. Then remove them from the water and let them dry.

In a large bowl, mix the potatoes, cucumbers, carrots, mayonnaise, salt, sugar, and pepper.

Mix well.

Japanese potato salad can be served immediately, but it's better to let it chill in the refrigerator for a few hours—it will taste even better. It's best served as a standalone dish. :)
