Description
The recipe won't take much time. There are variations of this soup with meat or smoked meats, but the more traditional version is vegetarian. Borscht is diluted with kefir, buttermilk, Greek yogurt, or a mixture of these dairy products. Beets are previously boiled or roasted. Serve the soup cold, garnished with herbs and boiled egg.

1. Boil the potatoes in their skins, then cool and peel. Cut the fresh cucumbers lengthwise into 4 parts, then slice thinly. Cut the potatoes into large pieces.

2. Wash all the greens, finely chop the onion, dill, and parsley. Boil and cool the beet. Boil the eggs.

3. Pour kefir into a large pot, peel the beet and grate it coarsely into the kefir.

4. Add the chopped herbs and cucumbers to the pot, season with salt to taste, and stir until the desired color is achieved. Place the pot in the refrigerator for half an hour.

5. Pour the cold soup into bowls. Slice the eggs and use them to garnish the soup. Serve with boiled potatoes.
