
Delicious solyanka soup
Description
The recipe won't take much time. You'll need a lot of different ingredients for this soup, but they're all things everyone has in their kitchen. I'm a fan of chicken broths, so I liked this version more than the meat-based one. I also suggest you try it. Ladle into bowls and serve.

Rinse the chicken. Place it in water in a pot, put on the stove, and bring to a boil.

Then remove the foam that forms and add salt. Simmer the broth for 40 minutes.

Then strain the broth and shred the chicken into fillet pieces.

Cook the barley separately until done, adding 600 ml of water to the grain.

Rinse the cooked grain in a colander. Let the water drain off. Meanwhile, peel the potatoes and cut them into cubes.

Sauté the peeled and finely chopped onion in oil for 10 minutes, stirring constantly.

Then add the paste. Mix everything. Cook for 2 minutes.

Cut the cucumbers into cubes and pour water over them until they are completely covered. Bring the water to a boil and cook for 5 minutes.

Meanwhile, place the strained broth over heat. Bring it to a boil, then add the pieces of chicken and potatoes. Cook the soup for 15 minutes.

After that, add the onion to the broth. Bring to a boil.

Then add the cucumbers together with the water. And again bring everything to a boil.

Next, add the cooked barley and bring the soup to a boil again.

At the end, add bay leaf and finely chopped dill to the rassolnik. Let it sit, covered and off the heat, for 15 minutes.
