
Grape gazpacho
Description
Gazpacho is a cold soup typically consumed during summer. Its homeland is Andalusia, in southern Spain. This soup is not cooked; traditionally, it is made from vegetables, garlic, olive oil, vinegar, and sometimes lemon is added. In this recipe, you are offered to make a fruit gazpacho. This gazpacho will refresh you during hot summer days. Serve it with herbs and sour cream.

1. Remove the seeds from half of the white grapes and finely chop. Set aside. Chill the soy milk. Finely chop half of the shallot. Set aside. Squeeze the lime juice. Peel the almonds, then cut them in half. In a blender, combine the soy milk and almonds. Blend for 2–3 minutes until the mixture turns into a puree.

2. Add grapes, onion, and lime juice. Season with salt and pepper.

3. Blend in a blender until the mixture turns into a homogeneous mass.

4. Place in the refrigerator and chill thoroughly. Before serving, mix well. Pour into bowls, and add finely chopped grapes and shallot.
