Minimum effort — excellent result. This salad pairs perfectly with hot meat dishes, poultry, or fish, or you can simply serve it with a slice of rye bread. A fresh, juicy apple harmonizes beautifully with all the other ingredients, adding a pleasant tang and a special touch. The flavor of the traditional vinaigrette becomes brighter, richer, and more interesting. Give it a try—it's a very successful and delicious variation. Prepare it and appreciate it for what it's worth—you won't regret it. Can be served immediately.

    Prepare all the ingredients from the list. Boil the potatoes, beets, and carrots in advance. The vegetables should be cooked but not overcooked, so they keep their shape when sliced. After cooking, let them cool completely at room temperature. Choose an apple that is not too sweet and not overly aromatic, but it's important that the apple has soft, juicy flesh. For this salad, use oil with a pronounced, distinct aroma. Use any fresh herbs you prefer; today I'm using dill.

    Peel the boiled potatoes and cut them into small cubes. Transfer to a deep bowl.

    Cut the carrots into cubes of the same size as the potatoes.

    Peel and slice the beetroot in the same way.

    Cut the pickled cucumbers into small cubes in the same way.

    Squeeze the sauerkraut by hand to remove excess brine, so the salad doesn't turn out watery. If the sauerkraut is too sour, you can rinse it with cold water and lightly dry it. Add the sauerkraut to a bowl.

    To give the vinaigrette a special fresh note, add apple cut into cubes. I left the skin on, but if it's tough, it's better to peel the apple.

    Wash the herbs and chop them with a knife. Using herbs will add aroma and lightness to the salad. Optionally, you can add a little parsley and green onion.

    Also cut the onion into cubes of the same size to ensure the salad has a uniform texture and is easy to mix. If you want to remove bitterness, you can scald the onion with boiling water beforehand. Pour in vegetable oil, then season the salad with salt and pepper to taste.
