Vinegret with lightly salted herring
Description
This is a very simple herring and vegetable salad recipe, and as I mentioned above, its ingredients are not much different from those of a classic vinaigrette. But we've added one new ingredient to this recipe, which has transformed the flavor of this familiar dish and given it a unique twist. Mildly salted herring is what makes this salad even more delicious and pairs perfectly with the other salad ingredients. Of course, I still love the good old vinaigrette with sauerkraut, but this version has become so popular with me and my family that lately it's our preferred choice. In terms of taste, this salad is something in between a classic vinaigrette and "herring under a fur coat"—it's absolutely delicious! Overall, I believe this is a truly worthy dish that can be served not only for everyday meals but also at festive tables; I'm sure your guests will love it. So do try this salad at home, and I'll be happy to share with you this wonderful recipe for herring vinaigrette.
Instructions
- 1
Step 1

First of all, let's start boiling our vegetables. Put the potatoes, carrots, and beets into a pot, pour in water, and place on the stove. Cook until fully done.
- 2
Step 2

Now it's time for the herring fillet. You can buy ready-made fillets, or (and I prefer this option) purchase a whole herring and remove the fillets from the bones yourself. It's very simple: make a cut along the backbone, remove the skin, and then carefully separate the meat from the bones.
- 3
Step 3

Cut the fillet into medium-sized squares.
- 4
Step 4

We also chop the onion quite finely.
- 5
Step 5

When the potatoes, carrots, and beets are ready, we need to cool them down and then peel them.
- 6
Step 6

And we proceed to cut them. First comes the potato, which we cut into cubes.
- 7
Step 7

We also cut the carrots into small cubes with sides about 1-1.5 centimeters.
- 8
Step 8

Do the same with the beet.
- 9
Step 9

Then finely chop the pickled cucumbers. You can use salted cucumbers instead, or omit them altogether, as the herring already adds enough saltiness to the dish.
- 10
Step 10

Now chop the fresh herbs; they never hurt in such dishes.
- 11
Step 11

Transfer all the chopped ingredients into one bowl, add oil, salt, and pepper, and mix well. Now divide among salad bowls and serve to your dear guests.
