Prepare all the ingredients.

Wash the beet, potatoes, and carrots, then boil or bake in the oven until cooked. Then let cool.

Rinse the lentils in cold water. Transfer to a saucepan, add water in an amount twice the volume of the lentils. Cook over medium heat until the lentils become soft. Then let cool.

Peel and dice all the vegetables. Finely chop the herbs. Thaw the green peas.

For the dressing, mix mustard, apple cider vinegar, and olive oil until well combined.
