Prepare all the ingredients.

Heat a saucepan over medium heat. Melt the butter and sauté thinly sliced onion until translucent.

Add the chopped ginger, chili pepper, mushrooms, garlic, and curry paste. Mix well. Sauté for 4-5 minutes, stirring occasionally.

Pour in the vegetable broth and coconut milk. Add lime juice, zest, lemongrass stalks, chopped tomatoes, coconut sugar, and tamari sauce. Bring to a boil, reduce the heat, and simmer covered for 10–15 minutes.
