
Vegetarian Cauliflower Soup
Description

Prepare all the ingredients in advance so that everything is within reach. Wash the vegetables.

Separate the cabbage into florets, slice the carrots into thin rounds, chop the onion, and cut the potatoes into pieces. Pour about 1.5 liters of water into a pot and place the potatoes in to cook until tender.

Remove the cooked potatoes from the water, then add the onion and carrots, and also add the previously washed rice.

Mash the potatoes with a fork into a puree, leaving some small pieces if desired.

15 minutes after adding the rice to the soup, return the potatoes to the pot and add the cauliflower florets. Cook for another 5-6 minutes, then add herbs, a little salt, cover, and let it steep for 10 minutes before serving.
