A hearty first course. I really like cream soups. Broccoli works best for such soups. Cook it with carrots and celery—they go very well together. I sometimes add cashews, though rarely. I used them in this recipe. A tip: if you decide to make a vegetarian broccoli and cashew cream soup, grind the nuts very finely, almost into flour. Otherwise, they will be crunchy when you eat them. Enjoy the delicious, delicate flavor! I'm sharing this vegetarian cream soup recipe with photos. Serve the soup hot.

    Prepare all the ingredients. Finely chop the onion and garlic, slice the broccoli, carrots, and celery. Chop the cashews (if you plan to use them).

    First, sauté the onion and garlic in olive oil for 2 minutes. Then add broccoli, celery, and carrots. Cook all the vegetables for 3 minutes.

    Add water, thyme leaves, and chopped cashew nuts to a saucepan, season with salt and pepper to taste. Bring to a boil. Simmer the puréed soup over medium heat for 25 minutes, leaving the lid slightly ajar to allow the water to evaporate. When the vegetables are very soft, blend them with a mixer or mash with a potato masher. Garnish the finished vegetarian broccoli puréed soup with fresh herbs.
