
Vegetarian Mushroom Soup
Description
Hearty and aromatic soup. This soup is very simple and quick to prepare. You can use any mushrooms you prefer or have on hand. If using dried mushrooms, soak them in water for several hours beforehand and then boil them. It's best to use small pasta. The soup is wonderfully fragrant, with a rich mushroom flavor. The soup is ready to serve.

Prepare the ingredients for making the soup.

Pour filtered water into a saucepan. Peel, wash, and chop the potatoes, then add them to the saucepan. Place on the stove and start cooking the soup.

Peel the carrots and onion, wash and chop them. Place in a frying pan.

Pour refined sunflower oil into a frying pan and lightly fry the vegetables over low heat for 7–8 minutes.

Then add onion and carrot to the pot.

When the vegetables are almost ready, clean, wash, and slice the mushrooms. Add them to the pot.

Add small pasta and bay leaf to the boiling soup. Season the soup with salt and pepper to taste.

Cook the soup until all ingredients are done and turn off the heat.

Add chopped parsley or dill to the finished soup.
