Ukrainian borscht with pampushky

    Combine water with milk, pour the ingredients into a bowl. Add sugar and yeast. Mix everything thoroughly and let it stand until foam appears.

    When the yeast becomes active, add 50 grams of vegetable oil, salt, and gradually incorporate rye and wheat flour in portions. Knead the dough and let it rise in a warm place.

    Pour clean drinking water into a saucepan. Place it on the stove and bring to a boil. Add chicken breast with bones, as well as peeled root vegetables and a whole onion. Add spices and salt. Cook for 30 minutes. Then remove the meat and vegetables from the broth. Peel, wash, and dice the potatoes. Add them to the broth and cook.

    Heat vegetable oil in a frying pan. Wash and peel the beet and carrot. Wash the pepper. Grate the carrot and beet on a grater, and slice the pepper into thin strips. Add the vegetables to the frying pan and sauté for about ten minutes. Then add the peeled tomatoes, grated on a grater.

    Slice the cabbage thinly with a sharp knife or using a special shredder. Add the cabbage to the broth.

    When the broth with cabbage comes to a boil, add all the contents of the skillet to the pot and mix thoroughly.

    Peel the remaining two onions and chop them into small cubes. Heat vegetable oil in a separate skillet and sauté the onions until golden. Add the sautéed onions to the borscht.

    Remove the boiled meat from the bones, slice it and add to the broth. Wash and dry the herbs, remove the stems. Finely chop them and add to the borscht. Let it simmer for five minutes, then turn off the heat.

    When your dough has risen (it should at least triple in size), shape it into buns. Place them on a baking sheet greased with vegetable oil, let them rest for another twenty minutes to rise. Then brush them with egg and bake in the oven for ten to fifteen minutes at 180 degrees.

    While the buns are baking, prepare an aromatic sauce for them. Peel the garlic, press the cloves using a garlic press. Add the remaining vegetable oil and a little water to the garlic. Mix thoroughly.

    Brush the finished pampushki with the garlic mixture. Let them cool, then serve with borscht. Add sour cream to the bowl of soup to taste.
