
Ukrainian borscht with sauerkraut
Description
The recipe won't take much time. Before you start cooking the borscht, be sure to taste the sauerkraut. If it's too sour, cover it with water and add a little baking soda. It will neutralize the excess acidity; after that, rinse the sauerkraut thoroughly. You can prepare this borscht using any meat, even chicken. This time I cooked it with pork stew. In addition to dill, you can add any fresh herbs to suit your taste. The soup is ready to serve.

Prepare all the necessary ingredients for making Ukrainian borscht with sauerkraut.

Wash the soup set and place it in a saucepan. Pour in two liters of water and cook over medium heat for 1 hour with minimal boiling, skimming off the foam.

Peel and wash the onion and carrot. Finely chop the onion and grate the carrot on a medium grater. Pour vegetable oil into a skillet and heat over medium heat. Add the prepared vegetables and sauté, stirring, for 5 minutes.

Rinse the sauerkraut and squeeze out the liquid. Cut it if necessary and add to the pan with the sautéed vegetables. Sauté everything together for another 5 minutes, stirring.

Wash the beet, peel it, and grate on a coarse grater. Add it to the pan with the vegetables.

Cover with a lid and simmer for 10 minutes, stirring.

Strain the broth through a fine sieve into a clean saucepan. Remove the meat from the soup set and set aside. Place over medium heat and bring to a boil, then season with salt.

Peel the potatoes, wash and cut into medium julienne strips.

Remove seeds and stems from the bell pepper, rinse, and cut into strips. Add to the pot with the potatoes and cook for 10 minutes.

Add the meat to the soup and cook for another 5 minutes.

Add the sautéed vegetables to the soup and mix. Add grated garlic and sugar to taste.

Rinse the herbs, dry and finely chop. Add to the borscht, season with pepper and bring to a boil. Remove from heat and let stand for 10 minutes.
