
Finnish-style salmon soup with cream

A hearty first course. Finnish-style fish soup is easy and quick to prepare. You can make it using just fish fillet in a vegetable broth, but the soup will be more flavorful and richer if you include fish heads and tails. Salmon fillet should not be overcooked, otherwise it will become tasteless and tough. Therefore, add the fillet to the soup 5 minutes before it's done. Prepare the necessary ingredients. Wash and peel the vegetables.

If you have fish tails and heads, cover them with cold water, add bay leaf and black pepper, and boil to make a broth. Strain the broth. Add diced potatoes (cut into small cubes) to the boiling broth and cook for 20 minutes.

Grate the carrots on a coarse grater, chop the onion. Sauté the vegetables in heated oil until golden, then add to the broth.

Remove the skin from the fillet, cut it into small pieces. Add to the soup and cook for 5 minutes.
