
Royal Fish Soup
Description
Hearty and aromatic soup. The recipe for royal-style fish soup is not very simple, nor is it easy, and it takes quite a lot of time to prepare. But believe me, sometimes it's worth spending the time to treat yourself, your family, and friends to a very tasty, rich fish soup. Royal-style fish soup, prepared at home, will delight you—especially delicious on the second day. Serve the soup hot.

Step 1

Place a whole rooster in a pot with water and put it on the stove. Bring to a boil and let it simmer for 5 minutes, then drain the broth. Pour fresh water into a clean pot, add the rooster, and cook for about 2–3 hours.

While the rooster is boiling, let's prepare the fish. Clean and rinse the fish, remove the fins, gills, head, and tail (do not discard them). Cut the fish bodies into large pieces. Traditionally, sturgeon and sterlet should be added to the soup, but we'll go for a simpler version and use pike and zander instead.

We remove the cooked rooster from the pot and add fish fins, tail, and heads to the broth. Simmer for about 30 minutes.

Remove the fins, heads, and tails from the broth. Add the pieces of pike. Cook for about 20 minutes. Then we'll also remove the pike. I fry it in butter, resulting in a separate dish.

After 20 minutes of boiling, remove the pike as well, then add the perch, coarsely chopped onion, green onion, carrot, garlic, and peppercorns. Boil for another 15–20 minutes.

Remove the herbs, add salt to taste and vodka. Cover with a lid and let it sit for 15–20 minutes. Serve the soup, sprinkled with herbs.
