    1. First of all, clean the fish. Cut off the head, tail, and fins of the bighead carp. Divide the main body into portion-sized pieces. Remove the gills and scrape off the mucus underneath with a knife. Wash all the fish meat, place it in a pot with cold water, and let it soak for an hour.
