
Herring soup
Description
A hearty first course. Of course, real ukha is traditionally cooked in a cauldron over a fire, and certainly not made from herring. What I'm offering you is rather a budget-friendly, quick, and simple recipe for herring soup suitable for a home-cooked meal. It turns out very tasty, but be careful with salt—the herring itself is quite salty, so don't over-salt the dish! I'm sure you'll succeed, especially now that you know how. Serve with fresh herbs and sour cream.

1. Finely chop the onion, or process it in a blender.

2. Peel the potatoes and cut them into matchsticks.

3. Bring the water to a boil, add salt and onions.

4. Immediately add the potatoes and the herring, peeled and freed from large bones. You can use it whole or cut into pieces.

5. In a small bowl, mix the semolina with the butter, stir until smooth, then, when the potatoes have softened, pour it into the pot.

6. Add the selected spices, bay leaf, and pepper.
