A hearty first course. Of course, my husband is a fisherman, and I can tell perch from pike, but not much beyond that. And so, at a friend's anniversary dinner at a restaurant, I tried a mysterious soup. When I got home, I decided to find out how to make it. Serve with fresh herbs and sour cream.

Step 1

Wash the leek and celery stalk and slice into half-rings.

Peel the onion and garlic and chop finely. Wash the herbs and chop finely.

Peel the carrots and thoroughly wash them together with the turnip. Cut these vegetables into small pieces.

Wash the fish fillet, remove bones and scales if necessary, and cut the fillet into small pieces.

In a heavy-bottomed saucepan, heat the butter and olive oil. Add both types of onion, garlic, and celery. Add salt, stir, and simmer over medium heat for 6 minutes.

Then add the turnip and carrot and mix. Pour in water, add a little salt, and mix again.

Next, add herbs, thyme, and bay leaf to the future soup. Also add the whiting.

Simmer the fish soup over low heat for 30 minutes, covered. Remember to remove the bay leaf and thyme before serving.
