    Rinse the rooster portion and place it in a pot or cauldron. Pour in hot water and bring to a boil, removing the foam that forms. Add salt, bay leaves, and simmer the bird for about 1.5 hours until tender. Then remove the rooster from the broth and separate it into pieces for serving.
