
Sturgeon Ukha
Description
A hearty and aromatic soup. There are quite a few recipes for fish soup (ukha). When it comes to vegetables, spices, and grains, you can experiment. In this case, the soup includes fish, as well as millet and tomatoes, but if desired, you can add potatoes or other vegetables you like.

1. Wash the fish, pour boiling water over it, and clean it.

2. Put the head, fins, and tail into a pot and pour water over them.

3. Peel the vegetables and root vegetables and add them to the broth. Season with salt and pepper to taste and simmer over low heat for about 40 minutes.

4. Then carefully remove the vegetables and fish trimmings, and strain the broth. Place it back on the heat.

5. Add the rinsed millet and cook over medium heat for about 20 minutes.

6. Cut the fish into small portion-sized pieces.

7. Wash the tomatoes. Place the sturgeon into the broth and cook for about 10 minutes. Add the tomatoes 3-4 minutes before the end of cooking.
