    Gut the hake, trim the fins, clean and wash thoroughly inside and out. Be sure to remove the black membrane from the belly.

    Cut the fish and place it in a pot. Then pour in water.

    Bring the water with the pollock to a boil, skim off the foam, and simmer over the lowest heat with the pot lid slightly ajar for 30 minutes.
