We fillet the fish. Use the fillets for baking, leaving only a small piece for fish soup. Do not discard the backbone; we will use it for the soup. Cover the backbone with cold water and start boiling for about 15 minutes.

Cut the piece of fillet we set aside into small pieces and set aside for now.

Peel the potatoes, wash them, and cut into small cubes.

Peel the onion and carrot. Finely chop the onion and grate the carrot on a coarse grater.

Sauté the onion and carrots in a pan with butter until almost cooked.

By this time, the coho salmon backbone has already cooked sufficiently. We strain the broth, place the backbone on a plate, and can still pick off pieces of meat from it. Then we add potatoes to the broth and continue cooking.
