
Carp Soup
Description
Perfect for lunch. Fans of fish dishes will surely appreciate this fish soup. Ideally, it's prepared over an open fire, but when cooked properly at home, it turns out just as delicious. Serve the dish hot, optionally with fresh herbs or croutons. Ladle into bowls and serve.

Clean the crucian carp (or buy already cleaned ones), then wash thoroughly and cut each into pieces.

Pour 2 liters of water into a pot, add the fish, season with salt, and place over heat. Bring to a boil, then reduce the heat and simmer for about 45–60 minutes.

After the required time, remove the fish, strain the broth, transfer it to a saucepan, return it to the heat, and add vegetable oil.

Peel and cut the potatoes into medium-sized pieces, slice the carrots into rounds, and chop the onion and pepper into small pieces.

After the broth comes to a boil, add the vegetables and cook until the potatoes are done.

Season to taste with salt and pepper, add lovage, vinegar, and pieces of fish. Turn off the heat and let the soup steep for 10-15 minutes with the lid on. Serve the soup hot.
