Description

The soup is simple and quick to prepare. Let true connoisseurs and experts in making ukha (fish soup) not be upset, but this recipe deserves to exist too. When we buy a fish carcass, it somehow feels a pity to throw away the head, tail, and fins. And there's no need to! Using this very recipe, you can make a delicious ukha (or fish soup—call it whatever you like) from these parts. The preparation method is very easy, yet the soup turns out tasty and aromatic. Serve with fresh herbs and sour cream.

    If you only have the sturgeon head, you can skip this step. For those with a whole sturgeon, first cut off the head, fins, and tail.

    Remove the gills and thoroughly rinse the head under water.

    Place the head, tail, and fins in a pot and pour water over them. Put on the stove and wait for it to boil.

    As soon as the water boils, reduce the heat under the pot and begin skimming off the foam.

    When no more foam appears, add half an onion and half a carrot, peeled. Cook for about 20 minutes.

    Next, add half of the salt, pepper, herb stems, and bay leaf. Cook for about 20-25 minutes.

    Strain the fish broth into another saucepan.

    Peel the potatoes and cut them into small cubes. Cut the remaining carrots as you prefer: into cubes or thin slices.

    Add the potatoes and carrots to the pot with the broth.

    Add the remaining onion, cut into thin strips, to the same pan.

    While the vegetables are boiling in the broth, dismantle the fish head and tail, removing the meat pieces. Add them to the pot with the fish soup. Continue cooking until the potatoes are done.

    You can add a little finely chopped greens to the fish soup. Add the remaining greens to the plates when serving.

    Serve the soup as you like. The women in my family prefer this soup clear and light. But I like to add a sliced boiled egg and a piece of butter. And don't forget the fresh herbs.
