Description
A hearty and aromatic soup. I use the classic Don fish soup recipe as a base, although originally it is prepared only outdoors and exclusively from freshly caught fish. Unfortunately, we don't always have such an opportunity, so we'll cook it at home. The recipe for Don fish soup is probably a bit more complex than other fish soup recipes, but believe me, your time will be well spent. But better to try once than to hear a hundred times, as they say. Serve the soup hot.

Place water in a deep pot and bring to a boil. In the first stage of preparation, we will cook the smaller parts of the fish, so add fish heads, bones, etc. into the water. Also add 1 whole onion and peppercorns to the pot and simmer for 10 minutes. Remove the fish from the broth.

Then, transfer the large pieces of fish, heads, and tails into the same broth and cook for another 10 minutes.

Meanwhile, we slice the carrots into rounds.

Slice the potatoes and onions. Remove the fish from the broth, transfer it to a separate plate, and let it cool. Add carrots, onions, and potatoes to the broth and cook for 15–20 minutes until the potatoes are done. Add fresh herbs.

Then we need to work with the fish. When it has cooled, we carefully separate it into small pieces and remove all the bones.

Put the meat back into the pot, add butter and tomatoes or tomato paste. Simmer over low heat for another 5 minutes.
